Why American Buttercream Falls Short
Some bakers try reducing the sugar, only to end up with something too soft to hold a swirl. Others add cream cheese or flavoured extracts to balance things out, but that changes the character of the buttercream entirely. The result is always a compromise.
Bakeries producing those perfectly smooth, subtly creamy celebration cakes are almost never using American buttercream for their decorating work. They use a different base.
What Professional Bakers Use Instead
The buttercream behind bakery-quality finishes is Swiss meringue buttercream. Instead of relying on icing sugar for structure, it builds around a cooked meringue base, with real butter folded in. The result is naturally less sweet, lighter in texture, and far less likely to leave a coating of fat on the tongue.
It also behaves differently when you work with it. It spreads smoothly, levels cleanly, and holds detail in piped designs in a way that icing sugar-based buttercream cannot match.
The problem is that making Swiss meringue buttercream from scratch is genuinely difficult. You need a sugar thermometer, careful temperature control, a stand mixer, and a fair amount of time. Even experienced bakers find it can split mid-process, leaving a curdled, greasy mess right when they need it most.
A Ready-Made Option That Does Not Cut Corners
This is exactly why Frostella Buttercream was created. It is a ready-made Swiss meringue buttercream, freshly made in small batches with real butter, sugar, egg whites, and vanilla. No additives, no preservatives, nothing artificial. It is the UK's first additive-free ready-made buttercream.
Orders are dispatched within one business day, with free next-day UK delivery via Royal Mail Tracked 24.
- The Family Pack (500g, £14.99) frosts around 12 cupcakes or a 6-inch two-layer cake.
- The Party Pack (1000g) covers a 10-inch tall cake or around 24 cupcakes.
- The Big Bake Tub (1500g) is there for bigger bakes. Every review left so far has been five stars.
One thing to know before you open the pack: Swiss meringue buttercream contains real butter and egg whites, and these can separate during storage and transit. The buttercream may look curdled, lumpy, or broken when you first open it. This is completely normal and does not mean it has gone off. Stirring gently or leaving it at room temperature will not fix it.
Here is what to do:
- Empty the entire pack into a microwave-safe bowl
- Microwave for 5 seconds on medium power
- Whip with a hand mixer on medium speed until smooth and creamy
